I have been the recipient of three Miyabi 6000MCT knives, all from Cook Culture. It works beautifully choked up on the blade for peeling, and when making garnish such as tomato rose etc. For reference, I peel everything with a pairing knife instead of a peeler. Decided to add to my “artillery” chose this one based on my abs other favorite knife, which is a JA Henckels. This knife cuts through frozen meat and huge heads of cabbage like butter! The only shortcoming I can think of is I wish the blade came with a good quality sheath.
